With a focus on flavour over age the whisky produced here is matured in red wine barrels mainly. All produce is sourced from Australia and usually only a days drive away, so it’s local. It only takes Starward whisky around three years to hit its optimum flavour profile and this is created by using the local climate to their advantage. Owner and founder David Vitale is food obsessed and wanted to create memorable moments around the dinner table and we have no hesitation that he has managed to produce this vision. The Tawny is a limited release and is extremely delicious. The spirit is twice distilled and then placed in ex-Tawny fortified wine barrels. The barrels are around 100litres in volume which gives this whisky extra richness due to more surface area and contact with wood through maturation. This whisky is described as ‘Christmas in a Glass’. Tasting Notes Nose: Dried orange, fig and toasted oak. Palate: Dried fruits and nutmeg. Finish: Long and spicy.  .
