The distillery was once situated at Essendon Airport in the old Ansett Hanger but after popularity of the whisky grew the space they had was too small. The distillery was moved to a larger space in Melbourne’s Port Melbourne district in 1996 and production was significantly increased. The distillery makes use of local wine barrels to mature its whisky. Winning international awards and local awards to strengthen its claim as a distillery on the rise to fame. Released under the Starward Projects label is this highly sought after single malt which has been released at 48% abv and has spent it’s life maturing in an ex-ginger beer cask. This is batch number 7. Our Tasting Notes Nose: Ginger snap biscuits, orange peel, dark chocolate. Palate: Bold ginger notes, spicy vanilla, fresh tropical fruits, dried dark fruits and toasted figs.
