The maturation process consists of spirit being given time to mature in European oak ex-Oloroso Sherry barrels and American oak ex-bourbon barrels. Matured for no less than 15 years this single pot still whiskey is truly superb and a leader in its field. Just think of the 12 year old but more of that delicious Redbreast flavour. So what exactly is single pot still whiskey? Essentially, it’s whiskey that is made from malted and un-malted barley and no other grain. It is unblended (thus the “single pot” bit.)
