This independent bottle by Signatory Vintage has been matured in Hogshead barrels and spent its final 48 months in an Oloroso Sherry cask. Only 363 bottles produced worldwide. Our Tasting Notes Nose: An amazingly balanced aroma initially giving exotic spices of vanilla pod, paprika, nutmeg, cinnamon and cloves. The oak is dominant which seems to pick up a wonderful cantaloupe melon, underlying mango and a hit of passionfruit. Pencil shavings, floral notes and hessian sack with a hint of varnish and chocolate orange. Palate: The spices return to the palate but now combine with citrus and stewed red apple. Buttery puff pastry, roasted barley, toasted almonds, layers of vanilla and citrus. Finish: A very long creamy finish, with fresh coconut, more vanilla. The floral elements have returned combining well with white pepper and ginger. More almond however this time more of an almond meal, caramelised walnuts and more citrus..
